元々ラーメンが強いところは大体最初の物珍しさから客は集まるけどそれを勘違いして店舗拡大→すぐに飽きられて客減少→店舗縮小または完全撤退してる新潟も同じらしい

1990年代、狸小路1丁目に北海道初出店した山岡家、今では全道にチェーン店があり、本社は札幌市東区東雁来に移転したという。
家系っぽいラーメンを受け入れられる土壌があるのに、撤退したって事は琴線に触れる人があまりいなかったって事だよ。

ぶっちゃけ本州チェーン＜地元の食堂的なラーメン屋なんだよな
本州チェーンは量がやたら少なくぬるく、満足度が低い
そして地元のラーメンブランド（チェーンまではいかないが複数店がある）にはまず勝てない
だってスープ薄いんだもん、そのくせタレがしょっぱすぎる
味の濃さはタレでごまかせるが、スープの薄さはごまかせない
だからスープがやたら濃い山岡家は受け入れられた

回転寿司の話があったけど、スシロー＆魚米は大量出店後大量閉店を経て、いろいろ改善して今の店舗数になった
どっちも完全撤退寸前まで減ってた
はま寿司は最初から好調だった
スシロー＆魚米は実際不味く感じたが、はま寿司は「１００円スシならまあこんなもの」で美味しく感じた
すしざんまい・くら寿司は最近でき始めたから今後はどうなるかってところ
なおカッパ寿司はない

工場スープの味
むしろ辺鄙なとこでしか通用しない味

今どきは蕎麦なら富士そばなんかのチェーンでもでも出汁つゆも店舗で仕込むし麺も店仕込みの店多い

工場で適当にコスト削って課長ぶち込んだようなスープをメディア看板でアホ釣るようなゲス商売してるようなラーメン界隈って堕落してるし遅れてるよなあ

店仕込み、店打ちの家系や二郎が繁盛するのは理由のあること

蘊蓄とかメディアとか要らんから
いい加減地に足つけてラーメン作れよ

ぶっちゃけ身も蓋も無い言い方をすれば、地元のチェーン店が大抵まずいからやと思う
好きな人には申し訳ないが具体名を挙げると、上にも出てる味の時計台とかさんぱちとか
つまり先入観っていうのは当たらずとも遠からず

あと山岡家はネット民には大絶賛だけど、店周辺が臭すぎるのと店内が清潔さが無いので
味はともかく一般ウケや家族ウケは正直してないと思う
